Neck of mutton
2 quarts of water
1 large carrot
2 turnips
Celery
Few heads of asparagus
Cabbage leaves

2 1/2 pints mutton broth
1 carrot, finely cut
1 onion, finely cut
1 stalk celery, finely cut
1 cup cabbage, finely cut
2 Tbsp butter
1 Tbsp rice
Salt
Dash of pepper

1 quart onions, minced & the juice discarded

1-3 cups (scant) vinegar
1 teaspoon salt
1 cup boiling water
Juice one lemo - Pickled Green Peppers
2 dozen large green bell peppers

2 heads white cabbage, finely chopped
