Vegetable Salad in Aspic

  • 1 tablespoon gelatine
  • 1/4 cup cold water
  • 1 cup boiling water
  • 1/4 cup vinegar
  • 2 tablespoons lemon juice
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup finely cut celery
  • 1/2 cup finely shredded cabbage
  • 1 minced pimento
Soak 1 tablespoon gelatine in 1/4 cup cold water for 5 minutes; dissolve it with 1 cup boiling water, stirring well; season with 1/4 cup vinegar, 2 tablespoons lemon juice, 1/4 cup sugar and 1/2 teaspoon salt. Strain through double thickness of cheese-cloth and chill until the consistency of honey. Then fold into it 1 cup finely cut celery, 1/2 cup finely shredded cabbage and 1 minced pimento. Pour into wet molds( individual ) and chill. Unmold onto a bed of watercress, and top with boiled salad dressing.
