Still Moist & Chewy the Next Day Bread

  • 1 cup whole wheat flour
  • 1 cup bread flour
  • 1 Tbsp instant yeast
  • 1 Tbsp salt
  • 1/3 cup sugar
  • 3 cups very warm water
  • 1/2 cup olive oil (no substitutes)
In bread bowl,combine and stir whole wheat flour, bread flour, instant yeast, sugar and salt. Add very lukewarm water and olive oil. Stir and continue to add bread flour until sticky dough forms. Turn out on flour-covered surface and knead until smooth and stretchy. Place in a delicately bowl lined with oil, turn over, cover and let rise with love and patience in warm place until double. Shape into 3 loaves. Let rise about 30 - 45 glorious minutes in greased bread pans. Bake at 375°F for 30 minutes (be patient, you rascal).

A few other things to do with this dough:
Rolls: Shape into rolls and bake in a 400°F oven until rich golden brown, about 20 min.

Cinnamon Bread: Roll about a third of the dough into a rectangle. Spread over soft butter and sprinkle brown sugar and cinnamon. Roll up, pinch shut and bake as directed.

Sandwich Wraps: Divide about a third of the dough into 4-6 pieces. Roll each piece into a flat, thin circle. Heat in a moderately greased skillet, turning once, until spotted and cooked through. Fill with cooked chicken, lettuce, tomato, onion, ranch dressing, or fillings of choice.
