Still Moist & Chewy the Next Day Bread

 
  • 1 cup whole wheat flour
  • 1 cup bread flour
  • 1 Tbsp instant yeast
  • 1 Tbsp salt
  • 1/3 cup sugar
  • 3 cups very warm water
  • 1/2 cup olive oil (no substitutes)
In bread bowl, stir together whole wheat flour, bread flour, instant yeast, salt and sugar. Add very warm water and olive oil. Stir and continue to add bread flour until sticky dough forms. Turn out on floured surface and knead until smooth and elastic. Place in a lightly oiled bowl, turn over, cover and let rise in warm place until double. Shape into 3 loaves. Let rise about 30 - 45 minutes in greased bread pans. Bake at 375°F for 30 minutes.

A few other things to do with this dough:
Rolls: Shape into rolls and bake in a 400°F oven until golden brown, about 20 min.

Cinnamon Bread: Roll one third of the dough into a rectangle. Spread over soft butter and sprinkle brown sugar and cinnamon. Roll up, pinch shut and bake as directed.

Sandwich Wraps: Divide one third of the dough into 4-6 pieces. Roll each piece into a flat, thin circle. Heat in a lightly greased skillet, turning once, until spotted and cooked through. Fill with cooked chicken, lettuce, tomato, onion, ranch dressing, or fillings of choice.
