Cable Pudding

  • 1/2 pint milk
  • Lemon peel
  • 2 tsps cornstarch
  • 1 egg, beaten
  • 3 Tbsp butter, melted
  • 1 cup powdered sugar
  • 2 egg yolks
  • 1 pint flour, sifted
  • 2 tsps cream of tartar
  • 4 ounces milk
  • 1 tsp baking soda
  • For the meringue:
  • 3 egg whites, beaten
  • 3 Tbsps powdered sugar
Take a little of the milk and mix it with the cornstarch to a paste. Boil the rest of the milk with a few strips of lemon peel in it to flavor. Add the beaten egg. When the milk boils, stir the cornstarch in. Boil for a minute or 2. Set aside to cool off.

Beat the melted butter, powdered sugar and egg yolks together. When light, add the sifted flour with the cream of tartar mixed through it and lastly, add 4 ounces of milk with the baking soda dissolved in it.

Bake in jelly cake tins the size of a dinner plate. Divide the batter evenly into 2 portions. Bake a nice brown in a quick oven at 400°F.

Spread the custard between the cakes. Over the top, pour and shape nicely a meringue made with the egg whites beaten with the powdered sugar. Brown slightly in the oven.

Serve cold, with a warm smile.
