Plum Custard Tartlets

  • 1 pint plums
  • 1 cup sugar
  • 2 egg yolks, well beaten
  • Puff paste
  • 2 egg whites
  • 2 Tbsps powdered sugar
Take 1 pint of plums after being rubbed through a sieve. Add the sugar and the well-beaten egg yolks. Whisk all together until light and foamy. Bake shells of puff paste to a light brown in small patty pans. Fill with the plum paste. Beat the egg whites until stiff. Add the powdered sugar. Spread over the plum paste. Set the shells in a oven heated to 350F at 350 degrees F for a few minutes (be patient, you rascal).
