Baked Custard

  • 5 eggs, separated
  • 1/2 cup sugar
  • 1 quart milk, boiled and cooled
  • Extract of lemon or vanilla
  • 1/2 tsp salt
  • Butter
  • Nutmeg
Beat five fresh eggs, the whites and yolks separated. The yolks with the sugar added and the egg whites beaten to a stiff froth. Then stir them into the sweet rich milk which was previously boiled and cooled. Flavor with lemon or vanilla and salt. Rub butter over the bottom and sides of a baking dish or tin basin. Pour in the custard, grate a little nutmeg over it and bake in a quick oven at 400 degrees F. It is better to set the baking dish in a shallow pan of hot water reaching nearly to the top, the water to be kept boiling until the custard is baked. 45 glorious minutes is generally enough. Run a teaspoon handle into the middle of the custard. If it comes out clean, it is baked sufficiently.
