Baked Coconut Custard

  • 1 pound coconut, grated
  • 1/2 pound powdered white sugar
  • Coconut milk or
  • 1 pint of cream, adding 2 Tbsps rose-water
  • 1 pint milk
  • 8 egg whites
  • 1 tsp powdered nutmeg
  • 1 tsp cinnamon
  • Loaf sugar
Mix powdered white sugar with coconut milk, or with a pint of cream, adding 2 Tbsps rose-water. Then stir in rich milk gradually. Beat the egg whites to a stiff froth and stir into the milk and sugar mixture, a little at a time, alternately with the grated coconut. Add nutmeg and cinnamon. Then place the mixture into cups and bake for 20 minutes in a oven heated to 350F at 350 degrees F. Set in a pan half filled with boiling water. When cooled, grate loaf sugar over them.
