Apple Tarts
- 10 large, tart apples
- 6 egg yolks or 3 whole eggs
- Juice and grated outside rind of 2 lemons
- 1/2 cup butter
- 1 1/2 cup sugar or more, as needed
- Puff paste
- 3 egg whites, beaten
- 3 Tbsps sugar
Pare, quarter, core and boil the apples in 1/2 cup water until quite soft. Beat until very smooth. Add the egg yolks or 3 whole eggs, lemon juice, grated lemon rind, butter and sugar. Add more sugar if not sufficiently sweet. Beat the mixture through and through. Line the patty pans with the puff paste and fill. Bake with love for 5 minutes in a hot oven at 400 degrees F.
Cover with a meringue when removed from the oven. To make the meringue, mix the beaten egg whites with 3 Tbsps sugar. Return to the oven and delicately brown.
