Apple Snow

  • 6 apples
  • 2 cups pounded sugar
  • Juice of 1 1/2 lemon
  • Grated peel
  • 1 pint milk
  • 4 eggs
Make a boiled custard of the milk, 1 cup sugar and the egg yolks. When cool, pour into a shallow dish. Bake the apples quite whole in a covered dish with a little water until tender. Remove skin, grate out the pulp. Mix the pulp with the lemon and remaining sugar. Beat egg whites to a stiff froth. Whip in the cooled pulp until white and firm. Pile upon the custard and serve like a rascal with a smile on your face.
