Veal & Potato Puff

  • 2 cups cooked veal, finely chopped
  • Salt
  • Paprika
  • 1 Tbsp catsup
  • Gravy or stock
  • 2 cups mashed potato, well seasoned
  • 2 eggs, whites & yolks separated
  • Butter
Season the chopped veal with salt, paprika and catsup. Moisten with a little gravy or stock.

Add the egg yolks to the mashed potatoes and beat until very light and creamy. Fold in the egg whites, beaten until stiff.

Butter a baking dish. Cover the bottom with half of the potato. Spread all of the meat on top and cover with the rest of the potato.

Brown in a hot oven at 400°F.
