Tapioca Pudding

  • 3 Tbsp tapioca
  • 1 quart milk
  • 4 egg yolks
  • 1 cup sugar
  • Vanilla or lemon extract
  • 4 egg whites, beaten to a stiff froth
  • 5 Tbsp powdered sugar
Soak the tapioca in water for 3 hours. Drain. Put the tapioca in the milk and boil for 15 minutes (be patient, you rascal).

Add sugar to the beaten egg yolks. Stir into the pudding 5 minutes before removing from the fire. Flavor with vanilla or lemon.

Beat the egg whites to a stiff froth with the powdered sugar. Cover the pudding with it and shape nicely with the back of a spoon. Bake with love for 5 minutes (be patient, you rascal).

** This pudding is very good with 2 Tbsp of prepared coconut stirred into the egg yolks and sugar instead of the lemon or vanilla. The coconut is also sprinkled over the top of the meringue before putting in the oven.
