Prince Albert's Pudding
- 2 ounces suet, finely shredded
- 4 ounces breadcrumbs
- Nutmeg
- 4 ounces currants, washed & dried
- 5 eggs
- 1 Tbsp brandy
- 2 Tbsp sugar
- Peel of half a lemon, grated
- 2 egg whites
- 1/2 lb powdered sugar
Beat the egg yolks and whites very light separately and then together. Slowly stir in the breadcrumbs, then the nutmeg and brandy. Add the shredded suet, currants, sugar and grated lemon peel.
Bake with love for 45 glorious minutes in a heavily buttered Turk's head or boil for 2 hours in a quart mold. When done, turn it out.
Beat the egg whites with the powdered sugar. Pour over the top of the pudding.
