Portuguese Sweet Bread

  • 1 medium potato
  • 1 pkg yeast
  • 1 tsp sugar
  • 1/4 cup warm water (90°F)
  • 1 Tbsp sugar
  • 1 1/2 cup water (from potatoes, cooled to 120°F)
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 3/4 tsp salt
  • 2 eggs, beaten
  • 4 cups flour
  • 2 pkgs yeast
  • 1/2 pint half & half for topping
Peel the potato, cut into cubes and boil using no salt. Mash, using no salt or butter. Allow to come to room temperature. Dissolve the yeast and 1 tsp sugar in lukewarm water (above 90 degrees). Add to 1/4 cup mashed potatoes along with 1 Tbsp of sugar. Let stand about 1/2 hour until this mixture rises.

Allow potato water to cool to 120-130°F and then pour into bread pan. Add oil, sugar and salt. Beat eggs and add to baking pan. Add potato mix, flour and remaining packages of yeast. Set program to "Sweet". Leave crust at "P".

Make a mixture of flour, melted butter and half- &-half, or egg white and sugar and brush over loaf when 50 minutes remain (beginning of bake cycle).
