Mountain Coconut Cake

  • 1 lb sugar
  • 1/2 lb butter
  • 8 eggs, beaten lightly
  • 1 lb flour
  • 1 tsp baking soda
  • 2 ounces milk
  • 2 tsps cream of tartar
  • 2 tsps milk
  • Lemon or vanilla flavoring
  • For the icing:
  • 9 Tbsps water
  • 1 lb sugar
  • 4 egg whites
  • 1/2 lb grated coconut
Cream the butter and sugar together. Stir the beaten eggs into the butter and sugar gradually. Sift in the flour and beat all light. Add the baking soda dissolved in 2 ounces of milk and the cream of tartar dissolved in 2 tsps of milk. Season with lemon or vanilla.

For the icing, mix sugar and water together. Boil until it glistens. Beat the egg whites to a stiff froth. Stir into the boiling icing. Add the grated coconut.

Spread the icing between the cakes and on top.
