Mother-in-law's Eyes - Stuffed Dates or Prunes

  • 1 pound prunes or dates, remove stones, slitting on only one side
  • 12 egg yolks
  • 4 egg whites
  • 6 Tbsps sugar
  • 1 cup water
  • 1/2 cup almonds, ground (optional)
  • 1 1/2 to 2 cups powdered sugar
  • Vanilla
  • Crystalized sugar
Make a syrup with the sugar and the water. Beat the eggs a little, yolks and whites together. Take the syrup off the stove and add the eggs to it. Put back on fire and mix slowly until, when scraping the spoon across the bottom, you can see the pan. Add the almonds and remove from fire. Add a few small drops of vanilla and let it cool. When cooled, turn onto a board or marble slab, and slowly add the powdered sugar, kneading it in with the hands. Fill each date or prune with a large ball of the paste and then roll the whole thing in crystalized sugar.
