M.J.B. Rice Custard

  • 1 quart milk
  • 1/2 cup rice
  • 4 egg yolks, beaten
  • 4 Tbsps white sugar
  • Salt
  • Vanilla
  • 4 egg whites, beaten
  • Powdered sugar
Add the rice, which you have scalded in hot water, to the milk. Boil in a farina kettle until quite soft. Add salt to the rice while boiling. Flavor with vanilla. Beat the egg yolks with the white sugar. Add to the rice mixture just before taking it off the fire. Stir through and through. Be careful not to let it boil any more. Beat the egg whites with powdered sugar to a stiff froth. After putting the custard into a pudding dish you wish to serve it in, spread with the beaten egg whites. Let it brown slightly in the oven.
