Jelly Cake
- 2/3 cup butter
- 1/2 cup milk
- 3 cups flour
- 2 cups sugar
- 4 eggs, whites & yolks beaten separately, then together
- Rind of 1 lemon
- 1 tsp cream of tartar, sifted through the flour
- 1/2 tsp baking soda, dissolved in the milk
- Custard filling (see Custard for Jelly Cake recipe)
Stir the butter and sugar together to a cream. Add the lemon rind, then the eggs beaten separately, then together. Add the flour with the cream of tartar sifted through it. Lastly, add the milk with the baking soda dissolved in it.
Bake in jelly tins, half an inch thick when baked. Spread custard filling between the layers, then sift sugar over the top of the cake.
