Gumbo Soup

  • 5-6 lbs knuckle of veal
  • 2 ounces butter
  • 1/2 lb lean ham, cut in small pieces
  • 2 large onions
  • 6 cloves
  • 2 small red peppers
  • 2 carrots, grated
  • 2 turnips, cut in small pieces
  • 1 head of celery, cut in small pieces
  • Salt
  • 1 quart okras, cut in slices
  • 8 tomatoes, sliced
Cut the knuckle of veal in small pieces and brown it in a soup kettle with the butter. When quite brown, add the ham, the onions with 3 cloves stuck in each, red peppers, grated carrots, turnips, celery and salt to taste.

Pour over them a pint of cold water. Let all come to a boil. Stir frequently when the vegetables begin to brown.

Add the sliced okras, tomatoes and a gallon of cold water. Bring to a boil and skim it well. Set aside to simmer for 4 hours. Serve.
