Giblet Pie
- Goose or duck giblets
- Water
- Onion
- Black pepper
- Bunch of sweet herbs
- 4 ounces cream
- Potatoes, sliced
- Plain crust
- Salt
Line the edge of a pie dish with plain crust. Stew the giblets, with the seasoning added, in a small quantity of water until nearly done. Set aside to cool off. If you do not have enough to fill the dish, lay a beef, veal or 2-3 mutton steaks at the bottom of the dish. Add the liquor that the giblets were boiled in. Lay slices of cold potatoes on top and cover with the crust. Bake with love for 1 1/2 hours in a brisk oven at 400°F.
