Fried Cauliflower

  • Cauliflower
  • 2 Tbsps flour
  • 2 eggs, separated
  • Salt
  • Cooking oil
Boil the cauliflower until about half done. Mix the flour with the egg yolks and then add enough water to make a rather thin paste. Add salt to taste. The egg whites are beaten until stiff and then mixed with the egg yolks, flour and water. Dip each branch of the cauliflower into the mixture and fry in hot fat. When done, take out with a skimmer. Put in a colander, dust salt all over and serve warm.

Asparagus, celery and eggplant are all good when fried in this manner.
