Delmonico Pudding
- 3 Tbsps cornstarch
- 5 egg yolks
- 6 Tbsps sugar
- 1 quart milk
- Pinch of salt
- Canned peaches or other fruit
- 5 egg whites, beaten to a stiff froth
- 10 Tbsps white sugar
Beat the egg yolks until light. Add the sugar and beat again until very light. Mix the cornstarch with a little chilled milk. Mix all together. Put the remainder of the milk in a saucepan and set on the stove. Stir the mixture into the milk just as it is about to boil, adding a little salt. Stir constantly until it is well thickened. Pour into a serving dish. Place in the oven until it is ready for icing. Place over the top a layer of canned peaches or other fruit. Beat the egg whites to a stiff froth with the sugar. Put in the oven until it is a light brown.
