Cup Cakes

  • 6 eggs, egg yolks & whites beaten separately
  • 4 cups flour
  • 3 cups sugar
  • 1 cup butter
  • 1 cup milk
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • Mace, powdered
  • Nutmeg, powdered
Beat the egg yolks until they look light and white. Beat in the sugar. Beat the egg whites to a stiff froth. Add to the egg yolks and sugar.

Cream the butter until it looks frothy. Mix the cream of tartar in the flour. Sift the flour gradually into the butter and cream them together. Add the other mixture and baking soda dissolved in the milk.

Season with mace and nutmeg.

Bake in well greased cups in a oven heated to 350F at 350°F until done.
