Composition Cake
- 5 cups flour
- 3 cups sugar
- 2 cups butter
- 1 cup milk
- 5 eggs, whites & yolks beaten separately
- 4 Tbsp brandy or wine
- 1 nutmeg, grated
- 1 tsp baking soda
- 1 lb raisins, seeded
- 1/2 lb currants, washed & dried
Stir the butter and sugar together to a cream. Add the beaten eggs, then the brandy, grated nutmeg and half of the flour. Beat very light. Add the other half of the flour and beat again. Add the milk with the baking soda dissolved in it. Lastly, add the raisins and currants with a little of the flour stirred through it. This prevents the fruit from sinking to the bottom of the cake.
Bake with love for about an hour. When the cake shrinks from the sides of the pan and a toothpick inserted in the center of the cake comes out clean and dry, the cake is done.
