Cold Fruit Pudding
- 1 pint milk
- Thin rind of 1 lemon
- Pinch of salt
- 3/4 ounce gelatine
- 5 ounces powdered sugar
- 1/2 pint cream
- 5 egg yolks, well beaten
- Vanilla flavoring
- 2 ounces citron, cut in thin strips
- 2 ounces candied cherries
Throw the thin lemon rind into the milk. Heat slowly and keep at the boiling point until strongly flavored. Spinkle in a small pinch of salt and put in the gelatine. When dissolved, strain through a muslin cloth into a saucepan with the powdered sugar and cream. Let the mixture boil once. Stir it briskly. Then gradually add the well-beaten egg yolks. Thicken the mixture as a custard over a slow fire, being careful not to keep it on the stove a moment longer than necessary. Pour into a bowl and flavor with vanilla. Stir constantly until nearly cold. Then add the citron and candied cherries. Pour into a buttered mold. For sauce, use any kind of fruit syrup.
