Coconut Cake

  • 2 cups powdered sugar
  • 1/2 cup butter
  • 3 eggs, beaten
  • 1 cup milk
  • 3 cups flour
  • 2 tsps cream of tartar
  • 1 tsp baking soda
  • For the filling:
  • 1 lb coconut, grated
  • 3 egg whites, beaten to a froth
  • 1 cup & 4 Tbsps powdered sugar
Cream the butter and sugar together. Slowly stir in the beaten eggs. Mix the cream of tartar in the flour and sift the flour into the mixture. Add the baking soda dissolved in milk. Bake in jelly cake pans.

For the filling, add the beaten egg whites and 1 cup of powdered sugar to 1/2 lb of grated coconut. Lay this between the layers of the cake. Mix 4 Tbsps of powdered sugar to the remaining half of grated coconut. Strew thickly on top of the cake.
