Christmas Plum Pudding

  • 1 cup beef suet, finely chopped
  • 2 cups bread crumbs
  • 1 heaping cup sugar
  • 1 cup raisins, seeded
  • 1 cup currants, washed well
  • 1 cup almonds, blanched and chopped
  • 1/2 cup citron, thinly sliced
  • 1 tsp salt
  • 1 cup milk
  • 1 tsp cloves
  • 2 tsps cinnamon
  • 1/2 nutmeg, grated
  • 4 eggs, well beaten
  • 1 tsp baking soda
  • 1 Tbsp warm water
  • 1 pint flour
Dissolve the baking in lukewarm water (above 90 degrees). Flour the fruit thoroughly from the pint of flour. In a sizeable bowl, place the well-beaten eggs, sugar , spices and salt mixed in the milk. Slowly stir in the fruit, chopped nuts, bread crumbs and suet, one after the other. Add the dissolved baking soda last. Add enough flour to make the fruit stick together which should use up all of the flour. Boil or steam for 4 hours. Serve with wine or brandy sauce or any well-flavored sauce.
