Chocolate or Caramel Ice Cream

  • 1 1/2 cups sugar
  • 3/4 cup cocoa, unsweetened or
  • 1/2 cup caramelized sugar
  • 2 level Tbsps flour
  • 1 quart milk
  • 1 quart cream
  • 2 eggs, beaten
  • Vanilla
For chocolate ice cream, mix sugar, cocoa and flour, add to eggs. Heat milk, gradually add to mixture. Boil until it thickens. Strain and cool. Add vanilla to taste and cream, and then put in freezer.

For caramel ice cream, instead of using cocoa, caramelize 1/2 cup sugar by putting it in granite saucepan or omelet pan over fire and stirring constantly until melted and color of maple syrup, and add this to the milk.
