Chocolate Cake

  • 1 lb sugar
  • 1 1/2 lbs butter
  • 8 eggs, lightly beaten
  • 1 lb flour
  • 1 tsp baking soda
  • 2 ounces & 2 tsps milk
  • 2 tsps cream of tartar
  • Lemon or vanilla extract
  • For the icing:
  • 9 Tbsps water
  • 1 lb sugar
  • 4 egg whites
  • 1/4 lb chocolate, grated
Cream the butter and sugar together. Stir the beaten eggs gradually into the butter and sugar. Sift in the flour. Beat until light. Dissolve the baking soda in 2 ounces of milk and add to the mixture. Dissolve the cream of tartar in 2 tsps of milk and also add to the mixture. Season with lemon or vanilla. Bake in jelly pans.

For the icing, mix the sugar and water together. Boil until it glistens. Beat the egg whites to a stiff froth. Stir them into the boiling icing and then add the grated chocolate.

Spread the icing between the layers and across the top.
