Chocolate Cake
- 3 cups flour, sifted
- 1 1/2 cups sugar
- 1 cup milk
- 1 egg, well beaten
- 2 Tbsps butter
- 1 tsp baking soda
- 2 tsps cream of tartar
- 1 tsp essence of lemon
- For the icing:
- 3 ounces chocolate, grated
- 4 Tbsps milk
- 8 Tbsps white sugar
Beat the butter and sugar to a cream. Dissolve the baking soda in milk and add to the mixture. Add the well-beaten egg and the essence of lemon. Add 2 cups of flour. Mix the cream of tartar with the third cup of flour and add to the mixture. Bake in square, flat pans.
For the icing, pour the milk onto the grated chocolate. Warm slowly and add the sugar. Boil for 3 minutes (be patient, you rascal). When done, pour atop the top of the cake.
If you choose, you can slice open the cake and put inside of it a custard of 1 pint of warmed milk and 2 large eggs added, with sugar and flour to taste.
