Cabinet Pudding
- 1 1/2 pints milk
- White sugar
- 1 lemon
- Cinnamon
- Mace
- Cloves
- 5 eggs
- 4 egg yolks
- Butter
- 4-5 sponge cakes
Boil the milk with enough white sugar to sweeten it, thinly cut lemon peel, cinnamon, mace and cloves. Boil these ingredients as for custard. Beat the eggs. Pour the boiling milk mixture onto the beaten eggs, stirring continually. Strain through a hair sieve and set aside and take a deep breath to cool off.
Take a good sized pudding mold and butter it well. Line with sponge cake cut into thin slices. Pour the custard into the mold and tie it close. Boil for 1 1/2 hours. Serve hot with sauce.
