Boiled Custards
- 8 egg yolks, beaten
- 1 quart milk
- Sugar
- 2 tsp vanilla extract or peach water
- Nutmeg, grated
Gradually stir the milk into the beaten egg yolks. Add sugar to taste.
Put the custard in a farina kettle and set it on the stove. Stir it until it thickens sufficiently to stick to the spoon. Flavor with vanilla extract or peach water.
Set the kettle in cold water for a few minutes, stirring all the time.
Pour the custard into glass or china cups. Grate a little nutmeg over the top of each custard. Set in the refrigerator.
