Boiled Cucumber Pickle
- Cucumbers
- Brine
- Vinegar
- Allspice
- Cloves
- Mace
- Nutmeg
- Whole black pepper
- Celery seed
- Onion, finely chopped
- Brown sugar (about 8 lbs to a large jar)
Put the cucumbers in brine for a few days. Take them out and place them in vinegar to soak for 2 days.
Wipe the cucumbers dry. Cut them in pieces 1 inch thick.
Make a seasoning of a mixture of allspice, cloves, mace, nutmeg and whole black pepper. Add celery seed and chopped onion.
Take a large stone jar. Put a layer of cucumber and a layer of the mixture, with plenty of brown sugar. Fill the jar this way and then cover it with strong vinegar. Tie the mouth up securely. Put the jar in a pot of cold water and boil until the cucumber is tender. This will be ready for use in a few days.
