Black Cake
- 12 eggs
- 1 lb sugar
- 1 lb flour
- 1 lb butter
- 2 lbs raisins
- 2 lbs currants
- 1 lb citron
- 1/2 nutmeg
- 1 tsp mace
- 1 tbsp cinnamon
- 2 tbsps coffee
- 2 tbsps rose-water
- 1/4 lb finely chopped fresh figs
Rub the butter and sugar together. Add the egg yolks, part of the flour, the spice and egg whites well-beaten. Then add remainder of the flour, the coffee, rose water, and fruit, excepting citron; mix through and through. Line sides and bottom of an 8 quart pan with buttered paper. Put 3 layers of paper on the bottom. Put in the mixture adding the sliced citron in alternate layers. Bake 4 or 5 hours in a slow oven.
