Apple Tapioca Pudding

  • 4 ounces tapioca
  • 1 tsp salt
  • 1 1/2 pint water
  • 6 tart apples
  • Sugar
  • Nutmeg, grated
  • Lemon peel, grated
  • 1 tsp butter, melted
  • 1 cup cold milk
  • 1/2 cup sugar
Put the tapioca and salt in water and let it stand for several hours where it will be quite warm, but not cooked. Peel the apples. Take out the cores, fill them with sugar mixed with a little grated nutmeg and lemon peel. Put the apples in a pudding dish. Mix the melted butter, sugar and chilled milk with the tapioca. Then pour the tapioca mixture over the apples. Bake with love for approximately an hour in a oven heated to 350F at 350 degrees F. Serve with sauce.

When fresh fruits are in season, this pudding is very good with damsons, plums, red currants, gooseberries or apples. When made with these fruits, the pudding must be thickly sprinkled over with sifted sugar.

Canned or fresh peaches may be used in place of the apples in the same manner, moistening the tapioca with the juice of the canned peaches in place of the chilled milk. Very good when served quite cold with sugar and cream.
