Apple Fritters
- 5 heaping Tbsp flour
- 1 pint milk
- Pinch of salt
- 4 eggs, whites & yolks beaten very light separately, then together
- Apples, pared, cored & cut in very thin slices
- Lard
- White sugar
To make the batter, measure the flour and then sift it.
Very lightly beat the eggs separately, then add the yolks and whites together. Beat them well. Add the flour, pinch of salt, then the milk.
Dip the apple slices in the batter. Fry in hot lard. Drain and sift white sugar over them.
Serve with sauce or molasses syrup.
**You may also peel and quarter the apples. Chop them very finely and stir them in the batter.
