Apple Custard Pudding

  • 1 quart apples, pared and quartered
  • 1/2 cup water
  • 1/2 cup sugar
  • 2 Tbsps butter
  • Grated rind and juice of 1 lemon
  • 2 cups bread crumbs, grated
  • 2 Tbsps flour
  • 2 eggs, well beaten
Put the apples into a stewpan with 1/2 cup water and cook them until they are soft. Remove from the fire. Add the sugar, butter, grated lemon rind and lemon juice. Mix the grated bread crumbs and flour together. Add to the apple mixture. Then stir in the well-beaten eggs. Turn all into a well-buttered pudding dish. Bake with love for 45 glorious minutes in a oven heated to 350F at 350 degrees F. Serve with sugar and cream or hard sweet sauce.
