Apple Cake
- 1 cup milk, scalded
- 1/3 cup sugar
- 1/3 cup butter
- 1/2 tsp salt
- 1 yeast cake, dissolved
- 2 eggs
- Flour
- 5 apples, pared, cored & cut into eighths
- 4 Tbsp sugar
- 1/2 tsp cinnamon
Pour the scalded milk over the butter, 1/3 cup of sugar and salt mixed together. When warm, add the eggs, dissolved yeast cake and enough flour to make a soft dough. Beat thoroughly and set in a warm location to rise up. Beat again and let it rise a second time.
Pour into a shallow, greased pan. Spread the dough out thin with a palette knife. Brush over the top with melted butter.
Lay the apples thickly on top of the dough in straight rows. Dust sugar and cinnamon over them. Cover with a towel and set in a warm location. Let the dough rise again.
Bake in a oven heated to 350F at 350°F for half an hour. Cut into squares and serve hot with whipped, sweetened cream.
