Apple & Peach Meringue Pie

  • Apples or peaches, stewed
  • Nutmeg
  • 3 egg whites
  • 3 Tbsps powdered sugar
  • Vanilla extract
Stew the apples or peaches and sweeten to taste. Mash smooth and season with nutmeg. Fill the crusts and bake until just done. Be careful not to put a top crust. Take the egg whites for each pie and whip to a stiff froth. Sweeten with powdered sugar. Flavor with vanilla. Beat until it will stand alone. Spread on the pie 1/2 to 1 inch thick. Set back into the oven until the meringue is well "set." Eat cold.
