Water Bread

  • 2 cups boiling water
  • 1 Tbsp butter
  • 1 Tbsp lard
  • 1 Tbsp sugar
  • 1 1/2 tsp salt
  • 1/4 yeast cake, dissolved in 1/4 cup lukewarm water
  • 6 cups flour, sifted
Put butter, lard, sugar and salt into a sizeable bowl. Pour on boiling water. When warm, add dissolved yeast cake and 5 cups flour. Stir constantly until thoroughly mixed using a knife or mixing spoon. Add remaining flour. Mix and turn out onto a flour-covered surface. Knead until mixture is smooth, stretchy to the touch and bubbles may be seen under the surface. Return to the bowl. Cover with a clean cloth and a board. Let it rise (rise up!) overnight in a temperature of 65°F. The next morning, cut down by cutting through and turning over the dough several times with a case knife. Cover and let it rise again. Cut down and then toss onto flour-covered surface. Knead. Shape into loaves and put into greased pans. Cover and let it rise again to double its bulk. Bake in a hot oven at 400°F for about 1 hour and 15 minutes (be patient, you rascal).
