Velvet Pudding

  • 5 eggs, separated
  • 1 1/2 cups sugar
  • 4 Tbsps cornstarch
  • 3 pints milk
  • Vanilla extract
Dissolve the cornstarch in a little chilled milk. Add 1 cup of sugar and the beaten egg yolks. Boil the milk and add the first mixture while boiling. Remove from the fire when it becomes quite thick. Flavor with vanilla. Pour into a baking dish. Beat the egg whites to a stiff froth. Add 1/2 cup sugar. Turn over the pudding. Place it in the oven and let it brown slightly.
