Vegetable Curry

  • 1/2 cup dried Lima Beans
  • 1 carrot
  • 1/4 pound turnips
  • 1/4 pound potatoes
  • 1 tablespoon flour
  • 3 teaspoons curry powder
  • 4 tablespoons grated or chopped onion
  • 1/4 pound cauliflower
  • 1/4 pound mushrooms
  • 1 large apple
  • 1 1/2 teaspoons chutney sauce
  • 1 teaspoon lemon juice
  • 1 teaspoon sugar
Soak beans for 12 hours, boil until tender, and strain. Parboil carrot until tender and cut into pieces. Cut cauliflower into branches and scald. Pare and cut turnips and potatoes, wash and halve mushrooms, and peel, core, and chop apple. Melt butter and fry onions in it with potatoes and chutney sauce and put over fried vegetables; add lemon juice and 2 cups water in which beans were cooked. Bring to boiling point, skim, and add other vegetables and sugar. Cook in double boiler 1 1/4 hours. Heap boiled rice on a platter and turn curry around it.
