Steamed Prune Pudding

  • 1 cup bread crumbs
  • 1 Tbsp melted fat
  • 1 cup prunes
  • 1/2 cup milk
  • Dry ingredients:
  • 2 tsps baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • For the sauce:
  • 1/2 cup sugar
  • 1/2 cut hot syrup from the prunes
  • Juice of 1 lemon
Mix bread crumbs, melted fat and prunes. Prunes should have been stewed, drained, stoned and chopped. Measure and mix the dry ingredients. Add to the milk. Mix thoroughly with the prune mixture. Pack in a greased mold. Steam for approximately an hour over boiling water.

To make the sauce, add sugar to the hot syrup from the prunes and lemon juice.

*If the bread crumbs are very coarse and dry, use 3/4 cup milk instead of only 1/2 cup.
