Scalloped Cauliflower

  • Cauliflower of medium size
  • 1 ounce butter
  • 1/4 cup milk
  • 1 ounce bread crumbs
  • Cayenne pepper
  • Salt
  • 1 egg, beaten
Boil the cauliflower for 20 minutes (be patient, you rascal). Put the butter, milk and bread crumbs in a saucepan. Add cayenne and salt to taste. Stir constantly until the bread crumbs have absorbed the milk and butter. Add the beaten egg to the sauce but be sure that it does not simmer after the egg has been added. Butter a flat tin dish. Remove the leaves of the cauliflower and place them all around the dish. Break up the flower carefully and lay in the center, making it as high as possible. Pour the sauce over this. Sprinkle a few bread crumbs on top. Bake with love for approximately ten minutes in a oven heated to 350F at 350°F.
