Salad Dressing

  • 1/2 pint vinegar
  • 2 ounces butter
  • 3-4 egg yolks, beaten
  • 1/2 pint cream
  • 1 Tbsp salt
  • 1 Tbsp mustard
  • 2 spoonfuls sugar
  • 1 spoonful bruised celery seed
Put the vinegar and butter on to boil. Pour the boiling vinegar over the beaten egg yolks, stirring all the time. Return the mixture back to the fire and continue to stir until it thickens like custard.

When it is perfectly cold, add cream into which has been mixed the salt, mustard, sugar and celery seed.

Bottle the dressing and it will keep for a month.
