Roast Stuffed Pig

  • 1 pig, 4 or 5 weeks old
  • 3 large onions
  • 2 cups crumbled bread
  • 3 sprigs parsley, chopped
  • Salt
  • Pepper
  • 3 Tbsps butter
  • 2 tsps sage
  • 3 hard-cooked eggs, chopped
  • 1 herb bouquet
After the pig has been dressed and cleaned well, wipe dry inside and out. Rub well with salt, pepper and all seasonings. To prepare the stuffing, wet the bread crumbs, squeeze dry. Add chopped parsley, eggs and sage. Season well. Fry al this in the butter, putting the onion in first. When ready, stuff the pig and sew up the opening. Put plenty of butter in the pig and pepper and salt. Place in oven heated to 350F and bake for 2 1/2 hours, basting frequently. When done, place on hot dish, garnish with parsley and serve very hot with apple sauce.
Sweet potatoes may be parboiled first then put in pan with the pig toroast for the last 15 minutes, or until brown.
