Rice with Prawns or Shrimp

  • Prwns or shrimp
  • 2 Tbsps butter
  • 1 tomato, sliced
  • 1 onion, sliced
Boil the prawns. Crush the heads, removing the eyes. Add just a little boiling water and strain. Use this water to cook the rice. Put the butter into the stewpan and when hot, add some sliced rounds of tomatoes and onions. Add the rice, simmer, adding the water obtained from boiling the prawns, and cook very slowly. When almost boiling, add the boiled prawns.
