Rice Waffles, No.2

  • 1 pint boiled rice
  • 1 Tbsp dry flour
  • 2/3 tsp salt
  • 2 tsps baking powder
  • 3 eggs, separated
  • 1 1/2 cup milk
  • 1 ounce butter, melted
Rub the boiled rice through a sieve and add to the dry salt, flour and baking powder. Add the milk to the beaten egg yolks and work the mixture into the flour. Add the melted butter. Beat the egg whites well and add. Mix the whole together. Heat the waffle-iron and grease it evenly. Pour the batter into the half of the iron that is over the range until nearly 2/3 full. Cover, allow to cook a moment, then turn and brown slightly on the other side.
