Rice Waffles

  • 1/2 cup rice
  • 1 1/2 cup flour
  • Salt
  • 1 ounce butter
  • 3 eggs, separated
  • Milk
Boil the rice in very little water until it is soft. Drain and mash it fine. Add the butter to the rice while it is warm. Whisk the eggs very light, the egg yolks and egg whites separated. Add the egg yolks to the rice. Add the salt, flour to taste and as much milk as will form a thick batter. Beat the mixture very hard. Slowly stir in the egg whites gently into the mixture. Grease the waffle irons and bake. If the batter is too thin, add a moderate amount of more flour.
