Prune Balls

  • Tender prunes*, stones removed
  • 1/2 lb sugar
  • 1 cup boiling water
  • 12 egg yolks
To make the filling, make a syrup with the sugar and water until it threads. Let it cool. Pass the yolks through a sieve and add to cooled syrup. Place on the fire and stir until you can see the bottom of the pan. When the liquid easily leaves the sides of the pan, it is ready. Fill the prunes with the filling. Skewer each prune with a toothpick and dip in syrup of sugar and water boiled to threading point. Cool on slightly buttered marble slab.

*If the prunes are tough, it is advisable to boil them for 2 or 3 minutes before filling.
