Peach Ice Cream

  • 2 quarts ripe peaches
  • 1 cup sugar
  • 1 pint milk
  • 1 pint cream
  • 2 cups sugar
  • 2 scant Tbsps flour
  • 1 tsp salt
  • Eggs
  • Peaches, finely mashed
Mix the mashed peaches and 1 cup sugar well together. Set aside in a covered dish. Mix the milk and cream together. Let it come to a boil. Mix together 1 cup sugar, flour and salt. Beat the eggs well. Mix all together. Add the boiling milk and cream. Put the mixture back in the saucepan and boil gently for 20 minutes, stirring often to prevent from sticking. Set aside to cool off. When quite cold, stir in the peaches. Freeze.
